Ingredients
  

  • 1 1/2 cups rolled oats
  • 1 cup raw cashews
  • 1/2 cup creamy cashew butter
  • 1/4 cup pure maple syrup
  • 1/4 cup Medjool dates pitted
  • 1 tsp vanilla bean paste
  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries crushed
  • 1/4 cup white chocolate chips
  • 1 tsp coconut oil
  • Freeze-dried strawberries for topping

Instructions
 

  • 1. Pulse oats and cashews in a food processor until fine.
  • 2. Add dates and pulse until chopped.
  • 3. Add cashew butter, maple syrup, vanilla, and salt. Blend until dough forms.
  • 4. Transfer to a bowl and mix in crushed strawberries.
  • 5. Roll 2 tablespoons of dough into balls. Place on parchment-lined tray.
  • 6. Freeze bites for 20-30 minutes.
  • 7. Melt white chocolate chips with coconut oil, then drizzle over bites.
  • 8. Top with additional crushed strawberries.
  • 9. Chill in the fridge to set before serving.

Notes

Store in fridge for up to 1 week or freeze for up to 3 months.
If dates are dry, soak in warm water before using.
