  • 250 g white chocolate finely chopped
  • 70 ml heavy cream
  • 40 ml limoncello liqueur
  • 1 tbsp unsalted butter
  • 1 tsp fresh lemon zest
  • 1/4 tsp vanilla bean paste
  • Pinch of salt
  • 80 g powdered sugar for coating or extra melted white chocolate for dipping

Instructions
 

  • Finely chop the white chocolate and place it in a medium mixing bowl.
  • In a small saucepan, heat the heavy cream and butter over medium heat until just simmering. Remove from heat and immediately pour over the white chocolate.
  • Allow the mixture to sit for 1-2 minutes, then gently stir until the chocolate is melted and smooth.
  • Stir in the limoncello, lemon zest, vanilla bean paste, and salt until fully combined. Cover the bowl and refrigerate for at least 2 hours or until firm enough to scoop.
  • Using a small spoon or melon baller, scoop out small portions and roll into balls. Coat each truffle with powdered sugar or dip in melted white chocolate, then transfer to a tray lined with parchment paper.
  • Chill the truffles for another 20 minutes before serving. Store in the refrigerator in an airtight container.

- Let the chocolate mixture sit undisturbed to ensure smooth melting.
- Adjust the limoncello to taste for stronger or milder flavor.
