Vanilla Bean French Toast Bake – A Cozy Make-Ahead Brunch Favorite

A cozy make-ahead Vanilla Bean French Toast Bake with custardy center and golden top. Perfect for holidays or weekend brunch.

Ingredients
  

  • 1 loaf brioche bread cubed
  • 6 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 vanilla bean seeds scraped
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Butter for greasing
  • Optional toppings: powdered sugar whipped cream, berries, maple syrup

Instructions
 

  • 1. Cube brioche bread and arrange in a buttered baking dish.
  • 2. Whisk eggs, milk, cream, vanilla bean seeds, sugar, and spices in a large bowl.
  • 3. Pour custard evenly over bread cubes, pressing gently so bread absorbs mixture.
  • 4. Cover and refrigerate overnight or bake immediately.
  • 5. Bake at 350°F covered for 25 minutes, then uncover and bake 20 more minutes until golden.

Notes

Best when prepared ahead and refrigerated overnight.
Can be frozen for up to 1 month and reheated in oven.
