Vanilla Bean French Toast Bake – A Cozy Make-Ahead Brunch Favorite

A cozy make-ahead Vanilla Bean French Toast Bake with custardy center and golden top. Perfect for holidays or weekend brunch.
- 1 loaf brioche bread cubed
- 6 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 vanilla bean seeds scraped
- 1/2 cup sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Butter for greasing
- Optional toppings: powdered sugar whipped cream, berries, maple syrup
1. Cube brioche bread and arrange in a buttered baking dish.
2. Whisk eggs, milk, cream, vanilla bean seeds, sugar, and spices in a large bowl.
3. Pour custard evenly over bread cubes, pressing gently so bread absorbs mixture.
4. Cover and refrigerate overnight or bake immediately.
5. Bake at 350°F covered for 25 minutes, then uncover and bake 20 more minutes until golden.
Best when prepared ahead and refrigerated overnight.
Can be frozen for up to 1 month and reheated in oven.
