  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup chopped dried or fresh mango Ripe mango recommended for best flavor
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 large egg

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream together the softened butter, brown sugar, and granulated sugar in a mixing bowl until the mixture is light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until well combined, ensuring a smooth and creamy texture.
  • In another bowl, whisk together the flour, baking soda, and salt until evenly mixed.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; the dough should be slightly thick.
  • Fold in the chopped mango gently until evenly distributed throughout the dough.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving enough space between each for spreading.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers appear set. The cookies will firm up as they cool.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a more intense mango flavor, consider using dried mango; ensure it's chopped finely. Cookies can freeze well; store in an airtight container for up to three months.
