- 1/2 cup unsalted butter
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs + 1 yolk
- 1 tsp vanilla extract
- 1/3 cup Dutch-process cocoa powder
- 1/2 cup all-purpose flour
- 1 tbsp cornstarch
- 1/4 tsp salt
- 1/3 cup heavy cream
- 1/2 cup semi-sweet chocolate for ganache
- 2 tbsp rainbow candy chips
1. Preheat oven to 325°F (163°C) and grease a mini muffin tin.
2. Melt butter and chocolate together until smooth.
3. Whisk in sugars, then add eggs and vanilla.
4. Add cocoa powder, flour, cornstarch, and salt. Mix until just combined.
5. Spoon batter into muffin tin, filling each about 3/4 full.
6. Bake 10–12 minutes. Cool completely.
7. Heat cream and pour over chocolate to make ganache.
8. Spoon ganache onto each cooled bite.
9. Top with rainbow chips and let set.
10. Store in an airtight container.
Use a 1:1 gluten-free flour blend if needed.
Rainbow chips can be swapped with mini M&Ms or sprinkles.
To freeze: wrap bites (before decorating) and thaw before topping.
