Ingredients
  

  • 1/2 cup cream cheese softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla bean paste
  • 1/2 cup strawberries diced
  • 4 tortillas 6 inch
  • 2 tbsp butter softened
  • 1 tsp sugar
  • 1/2 tsp cinnamon

Instructions
 

  • 1. Add the softened cream cheese, sugar, and vanilla to a mixing bowl and beat until smooth.
  • 2. Dice strawberries and fold them into the cream cheese mixture.
  • 3. Spread half of the mixture onto a tortilla.
  • 4. Heat 1 tsp of butter in a pan over medium-high heat. Lay the tortilla in the pan, cream cheese side up.
  • 5. Spread 1 tsp of butter on a second tortilla and place it butter side up on top of the first tortilla.
  • 6. Cook each side for 2-3 minutes or until crispy.
  • 7. Mix cinnamon and sugar, then sprinkle on top of the cooked quesadilla.
  • 8. Repeat steps for the second quesadilla.
  • 9. Let sit for 2 minutes, slice, and serve with strawberry sauce if desired.

Notes

Great on their own or dipped in homemade strawberry sauce.
Store in the fridge for up to 3-4 days or freeze for up to 2-3 months.
