- 5 cups sliced fresh strawberries
- 1/2 cup granulated sugar
- Pinch of salt
- 1 tbsp cornstarch
- 2 tbsp water
- 2 refrigerated pie crusts e.g., Pillsbury
- 1 cup powdered sugar
- 2 tbsp milk
- 1/8 tsp vanilla extract
- Rainbow sprinkles
1. Macerate strawberries with sugar and salt for 15 minutes.
2. Simmer the mixture for 15 minutes until juicy.
3. Whisk cornstarch and water to make slurry; stir into berries to thicken.
4. Cool filling 10 minutes; preheat oven to 375°F.
5. Grease pie pan; line with first crust.
6. Add filling, spread evenly.
7. Top with second crust, seal edges with fork, cut a vent in center.
8. Bake for 30–40 minutes until golden and bubbly.
9. Cool at least 2 hours.
10. Whisk glaze ingredients and drizzle over pie.
11. Top with sprinkles and let set before slicing.
You can use puff pastry for a flakier texture.
Feel free to swap strawberries for cherries or raspberries.
