Strawberry Crêpe Recipe – Elegant, Sweet, and Easy to Make

There's no better way to take a regular crepe over the top than this amazing Strawberry Crepes recipe with a creamy whipped filling and fresh strawberries. They're easy to make and perfect for a fancy breakfast or dessert!

Ingredients
  

For the Crepes:

  • 4 large eggs
  • 1/3 cup butter softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/4 cups milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  •  

For the Filling:

  • 2 cups fresh strawberries sliced
  • 4 ounces cream cheese room temperature
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 pint heavy whipping cream
  • 3 Tablespoons powdered sugar

Instructions
 

  • 1. Add all ingredients to a blender and blend until smooth. Scrape down the sides if needed. Refrigerate for 30 minutes (optional).
  • 2. Heat a non-stick skillet to medium heat. Lightly grease with butter or cooking spray.
  • 3. Pour a few tablespoons of batter and tilt skillet to coat bottom thinly. Cook 30–60 seconds until edges curl and bottom is golden. Flip and cook 30 seconds.
  • 4. Remove to a plate, covering to keep warm.
  • 5. In a bowl, beat cream cheese, powdered sugar, and vanilla for 2 minutes.
  • 6. In another bowl, beat heavy cream with powdered sugar until stiff peaks. Fold into cream cheese mixture.
  • 7. Spread filling on each crepe, add sliced strawberries, roll or fold, and serve with extra berries, powdered sugar, and whipped cream.

Notes

Make Ahead: Batter can be made 1 day ahead and kept in the fridge. Filling and strawberries can also be prepped in advance.
Variations: Try with raspberries, blackberries, or bananas. Add Nutella for a richer twist. For savory crepes, omit vanilla and sugar and add savory fillings.
