  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice such as oat milk or almond milk
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons cream cheese softened
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla bean paste
  • Pinch of salt
  • 3/4 cup fresh strawberries chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon maple syrup
  • 2 tablespoons crushed graham crackers or granola optional
  • Extra sliced strawberries for garnish optional

Instructions
 

  • Combine chopped strawberries with lemon juice and 1 teaspoon maple syrup in a small bowl. Let sit to soften.
  • In a medium bowl, whisk softened cream cheese, Greek yogurt, vanilla bean paste, remaining maple syrup, and salt until smooth.
  • Stir rolled oats and milk into the cheesecake mixture. Let sit for 5 to 10 minutes.
  • In jars, alternate layers of the oat mixture and strawberries, ending with a layer of oats.
  • Cover jars and refrigerate for at least 6 hours or overnight.
  • Top with crushed graham crackers or granola and extra strawberries before serving.

Notes

- Adjust sweetness with more or less maple syrup.
- Use any milk variety you prefer.
