Preparation

  • Preheat your oven to 325°F (160°C). Line two lightly colored baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, combine the softened butter, powdered sugar, vanilla extract, and all-purpose flour.
  • Mix on a low speed until the mixture turns crumbly.
  • Form the dough into a ball and roll it out between two sheets of parchment paper to about 1/3-1/2-inch thick.
  • Use a cookie cutter to cut out small 3-inch circles or any shape you desire, then transfer them to your prepared baking sheets.
  • Bake for 12-15 minutes, or until the bottoms are barely golden brown.
  • Allow the cookies to cool for 5 minutes on the hot baking trays before transferring them to cooling racks.

Notes

Chill your dough if it's too soft to handle. Store the cookies in an airtight container for up to 5 days. Consider freezing the dough for later baking.
