- 1/2 onion chopped
- 1/2 head cauliflower cut into florets
- 1 pound mushrooms cleaned
- 2 tablespoons low sodium vegetable stock
- 1 teaspoon fresh thyme leaves chopped
- 2 tablespoons fresh parsley chopped
- 4 cloves garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
1. Heat butter and olive oil in a large skillet over medium-high heat.
2. Sauté onion until softened, about 3 minutes.
3. Add mushrooms; cook for 4-5 minutes until browned.
4. Add cauliflower; cook until golden, about 8-10 minutes.
5. Pour in vegetable stock; cook for 2 minutes.
6. Add thyme, 1 tablespoon parsley, and garlic; cook for 30 seconds.
7. Season with salt and pepper; garnish with remaining parsley and serve.
