Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 blocks cream cheese softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 4 apples Granny Smith or Honeycrisp, sliced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 cup caramel sauce
  • 1 tsp flaky sea salt
  • Whipped cream & nuts for topping

Instructions
 

  • 1. Mix graham crumbs and butter; press into springform pan.
  • 2. Beat cream cheese and sugar until smooth; add eggs, sour cream, vanilla.
  • 3. Pour filling over crust.
  • 4. Cook apple slices with brown sugar, cinnamon, nutmeg, and lemon until softened.
  • 5. Spread apple mixture over cheesecake filling.
  • 6. Bake in water bath at 325°F for 60–70 minutes.
  • 7. Cool, then chill at least 4 hours or overnight.
  • 8. Top with salted caramel, whipped cream, and nuts.

Notes

Use firm apples for best texture.
Chill overnight for clean slices.
Homemade caramel adds the richest flavor.
