Red Velvet French Macarons

  • 1⅔ cup powdered sugar
  • 1 cup almond flour
  • 1 tablespoon cocoa powder
  • 3 large egg whites
  • ¼ cup granulated sugar
  • 1-2 drops red food gel coloring
  • 4 oz cream cheese softened
  • ½ stick unsalted butter softened
  • 1 teaspoon pure vanilla bean paste
  • cups powdered sugar

Instructions
 

  • Preheat your oven to 300°F.
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Use a food processor to pulse the powdered sugar, almond flour, and cocoa powder until combined and smooth. Sift into a large bowl and set aside.
  • In a medium bowl, beat egg whites on low until foamy, then gradually add granulated sugar. Add red food coloring and beat until stiff peaks form.
  • Fold the meringue into the dry ingredients gently using a silicone spatula until fully combined and smooth.
  • Transfer the mixture to a piping bag with a piping tip and pipe 1-inch disks onto the prepared baking sheet.
  • Tap the baking sheet on the counter to release air bubbles. Use a toothpick to pop any remaining bubbles.
  • Let macarons rest for at least 1 hour until a skin forms on the surface.
  • Bake in the oven for 15 minutes, rotating the pan every 5 minutes.
  • Remove from oven and let cool completely on the baking sheet.
  • For the filling, beat cream cheese and butter until creamy. Add vanilla and half of the powdered sugar, beating until smooth. Add remaining powdered sugar and beat until fluffy.
  • Place filling in a piping bag, pipe onto one macaron shell, and top with another shell.

Notes

- Macarons should not stick to your finger when ready to bake.
- Rotate the pan to ensure even baking.
