  • 1⅔ cup powdered sugar
  • 1 cup almond flour
  • 1 tablespoon cocoa powder
  • 3 large egg whites
  • ¼ cup granulated sugar
  • 1-2 drops red food gel coloring
  • 4 oz cream cheese softened
  • ½ stick unsalted butter softened
  • 1 teaspoon pure vanilla bean paste
  • cups powdered sugar

Instructions
 

  • Preheat your oven to 300°F.
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Pulse powdered sugar, almond flour, and cocoa powder in a food processor until combined. Sift into a bowl.
  • Beat egg whites on low until foamy. Gradually add granulated sugar and red food coloring. Beat until stiff peaks form.
  • Fold meringue into dry ingredients with a spatula until no streaks remain.
  • Transfer to a piping bag. Pipe 1-inch disks onto the baking sheet.
  • Tap the baking sheet to release air bubbles. Let rest for 1 hour.
  • Bake on the center rack for 15 minutes, rotating every 5 minutes.
  • Cool completely on the baking sheet.
  • Beat cream cheese and butter until creamy. Add vanilla and half the powdered sugar. Beat until smooth.
  • Add remaining powdered sugar. Beat 5-6 minutes until fluffy.
  • Pipe filling onto one cookie, top with another.
