Ingredients
  

  • 1 cup butter softened
  • 3/4 cup sugar
  • 1/4 cup brown sugar packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup canned pumpkin
  • 2 cups flour
  • 3/4 cup chopped pecans

Instructions
 

  • 1. Preheat oven to 350 degrees.
  • 2. Line baking sheet with parchment paper.
  • 3. In a bowl, mix butter, sugars, and egg with a mixer on medium speed until light and fluffy.
  • 4. Add baking powder, baking soda, salt, cinnamon, nutmeg, and allspice to the butter mixture and blend.
  • 5. Add pumpkin and pecans; blend until combined.
  • 6. Drop heaping teaspoons of dough onto the lined baking sheet.
  • 7. Bake for 12-14 minutes until lightly browned.
  • 8. Transfer cookies to a wire rack and let cool.

Notes

Ensure butter is softened for easier mixing.
Use canned pumpkin puree, not pie filling, for best results.
