  • 1 teaspoon pure vanilla bean paste
  • 1 cup plain Greek yogurt 2 percent or 5 percent
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup dark chocolate chips chopped nuts, or dried fruit

Instructions
 

  • Preheat the oven to 350°F and line a light colored baking sheet with parchment paper.
  • In a medium bowl, whisk the egg and vanilla bean paste until smooth and slightly frothy.
  • Add the Greek yogurt, granulated sugar, and brown sugar to the egg mixture and whisk until fully combined and creamy.
  • In a separate bowl, whisk together the flour, baking soda, and salt until well combined.
  • Add the dry ingredients to the wet ingredients and fold together with a spatula just until no dry streaks of flour remain.
  • Gently fold in the mix ins until evenly distributed without overmixing the dough.
  • If the dough feels very sticky, refrigerate it for 10 minutes to firm slightly.
  • Scoop the dough by tablespoonfuls onto the prepared baking sheet, spacing each portion about 2 inches apart.
  • Lightly flatten each dough mound into a short disc with damp fingers or the back of a spoon.
  • Bake for 10 to 12 minutes, until the edges are lightly golden and the tops look just set.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

- Use full fat Greek yogurt for richer flavor and softer texture, or low fat for a slightly lighter cookie.
- Stir the dough gently to keep the cookies tender and avoid a tough texture.
- You can mix and match dark chocolate, chopped nuts, and dried fruit, but keep total mix ins at 1/2 cup.
