  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • a pinch salt
  • 1 large egg
  • 3 tablespoons unsweetened almond milk
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon coconut oil
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons Greek yogurt
  • 2 tablespoons cream cheese
  • 1 tablespoon maple syrup or powdered sugar

Instructions
 

  • Combine protein powder, flour, baking powder, cinnamon, and salt in a microwave-safe mug.
  • Add egg, milk, maple syrup, and vanilla to the dry mix. Stir until smooth.
  • Mix coconut oil, brown sugar, and additional cinnamon in a separate bowl.
  • Pour the cinnamon mixture over the batter and swirl with a toothpick.
  • Microwave for 60 to 90 seconds, until edges are set and center is soft.
  • Mix Greek yogurt, cream cheese, and maple syrup or powdered sugar for the frosting.
  • Spread or drizzle the frosting over the warm cake and serve immediately.
