  • 1 cup creamy peanut butter
  • 1 ½ cups powdered sugar
  • 2 tablespoons butter softened
  • 1 teaspoon vanilla bean paste
  • ¼ teaspoon salt
  • 12 ounces semi-sweet chocolate chips
  • 1 teaspoon coconut oil or shortening

Instructions
 

  • Combine peanut butter, powdered sugar, butter, vanilla, and salt in a bowl until smooth and firm.
  • Shape mixture into small egg shapes and chill on parchment paper for at least 30 minutes.
  • Melt chocolate with coconut oil, then dip chilled eggs fully, letting excess chocolate drip off.
  • Chill 15–20 minutes until set.

Notes

- If mixture is too sticky, add a bit more powdered sugar.
- Store in an airtight container in the fridge for up to 2 weeks.
