  • 2 ripe bananas
  • 1/2 cup peanut butter
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1/3 cup milk
  • 1 tsp vanilla bean paste
  • 1/2 tsp cinnamon
  • Optional: chocolate chips chopped nuts, oats, shredded coconut

Instructions
 

  • Preheat oven to 350°F (175°C). Line muffin tin with liners.
  • Mash bananas and mix with peanut butter, eggs, milk, and vanilla.
  • In a separate bowl, combine flour, baking powder, baking soda, salt, sugar, and cinnamon.
  • Fold dry mixture into wet mixture. Add optional add-ins.
  • Spoon batter into muffin tin and bake for 18–22 minutes until golden and a toothpick comes out clean.
  • Cool slightly before serving.

Notes

- Use overripe bananas for best sweetness.
- Do not overmix to ensure fluffy muffins.
