  • 1 cup almond flour
  • 1/2 cup peanut butter
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

For the filling and topping

  • 1/2 cup caramel sauce (preferably salted)
  • 1/4 cup chocolate chips
  • 1/4 cup crushed pecans
  • Flaky sea salt (optional)

Preparation

  • In a medium bowl, combine the almond flour, peanut butter, cocoa powder, maple syrup, vanilla extract, and salt. Stir until the mixture looks evenly dark and glossy, with no dry pockets of almond flour.
  • Divide the brownie dough between 6 slots in a silicone muffin pan, pressing the dough firmly into the bottoms to form a compact layer.

Creating the Caramel Center

  • Use a tablespoon to press a well in the center of each cup, creating a crater to hold the caramel.
  • Spoon caramel sauce into each well, dividing it evenly among the cups.
  • Transfer the pan to the freezer for 5–10 minutes until the caramel feels slightly firm.

Finishing Touches

  • Melt the chocolate chips in the microwave in 30-second intervals until smooth.
  • Remove the brownie cups from the mold and drizzle the melted chocolate over the tops. Sprinkle with crushed pecans and flaky sea salt if desired.

Serving

  • Enjoy immediately for a softer texture, or refrigerate for a firmer bite.

Notes

For the best results, compact the base well into the muffin slots, and adjust the caramel well depth accordingly. Store in a sealed container in the refrigerator for up to 1 week.
