Ingredients

Ingredients

  • 1/2 cup quick oats
  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey
  • 1/4 cup mini chocolate chips

Instructions

  • Add the quick oats and mini chocolate chips to a medium mixing bowl and stir to combine.
  • Add the peanut butter and honey to the bowl.
  • Use a sturdy spoon or spatula to mix, pressing the ingredients together until a thick, slightly sticky dough forms that holds when pinched.
  • Divide the mixture into 12 equal portions using a teaspoon or small cookie scoop.
  • Roll each portion between your hands to form smooth, firm balls.
  • Place the energy bites in a single layer on a plate or tray.
  • Enjoy immediately or chill for 15 to 20 minutes for a firmer texture.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 7 days.

Notes

- If the mixture is too dry to hold together, mix in 1 teaspoon additional honey.
- If the mixture is too sticky to roll, sprinkle in 1 tablespoon extra oats and mix again.
- Lightly dampen your hands with cold water or a tiny amount of neutral oil to prevent sticking while rolling.
- For longer storage, freeze the bites on a parchment lined tray, then transfer to a freezer bag and freeze for up to 2 months.
- Thaw frozen bites in the refrigerator for a few hours or at room temperature for about 20 minutes before serving.
