Preparation

  • Load the food processor with dates, mixed nuts, shredded coconut (if using), vanilla extract, and a pinch of salt.
  • Process until the mixture becomes sticky and cohesive, resembling a dough.
  • Turn the mixture out onto a sheet of parchment paper and shape it into a rough log.
  • Wrap the log tightly in parchment paper to help it firm up evenly.
  • Refrigerate for at least 1 hour until firm.
  • Unwrap the log and slice into rounds.

Notes

Press the log firmly to prevent crumbly edges and slice with a clean knife for neat rounds. This roll can be stored in the fridge or frozen for later use.
