  • 2 sticks 227 g unsalted butter, softened
  • 3/4 cup 150 g white sugar
  • 3/4 cup 165 g light brown sugar, packed
  • 2 cups 250 g all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon vanilla bean paste
  • 1/3 cup milk
  • 2/3 cup 120 g mini chocolate chips
  • 7 ounces 200 g milk or dark chocolate, chopped, for coating

Instructions
 

  • In a large mixing bowl, beat the softened butter, white sugar, and light brown sugar with a hand mixer on medium speed until pale and fluffy, about 3 to 4 minutes.
  • Add the vanilla bean paste and beat until fully incorporated and fragrant.
  • Add the all-purpose flour and salt to the bowl, then mix on low speed just until a thick dough starts to form.
  • Switch to a spatula and gradually stir in the milk until the dough is soft, scoopable, and holds its shape when rolled into a ball.
  • Fold in the mini chocolate chips until evenly distributed throughout the dough.
  • Use a small cookie scoop or a heaped teaspoon to portion the dough, then roll each portion between your palms to form smooth balls.
  • Place the dough balls on a parchment-lined baking sheet, spacing them slightly apart, and refrigerate for 20 minutes to firm up.
  • While the dough chills, place the chopped milk or dark chocolate in a microwave-safe bowl and melt in 30-second intervals, stirring after each, until smooth and fully melted.
  • Remove the chilled dough balls from the refrigerator. Drop one ball at a time into the melted chocolate, turning it with a fork to coat completely.
  • Lift the coated ball with the fork, gently tap the fork on the edge of the bowl to let excess chocolate drip off, then place the coated bite on a parchment-lined baking sheet.
  • Repeat with the remaining dough balls, reheating the chocolate briefly if it begins to thicken.
  • Let the coated bites sit at room temperature until the chocolate is fully set, or refrigerate the tray for 15 to 20 minutes until firm before serving.

Notes

- For a glossier, snappier shell, you can temper the coating chocolate instead of simply melting it.
- Store the cookie dough bites in an airtight container in the refrigerator for up to 7 days, or freeze for up to 2 months.
