  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla bean paste
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup mini chocolate chips
  • 8 ounces German sweet chocolate chopped
  • 1 teaspoon neutral oil optional, to thin chocolate

Instructions
 

  • Preheat the oven to 350°F. Spread the flour in a thin, even layer on a baking sheet and bake for 5 minutes. Let the flour cool completely.
  • In a large mixing bowl, combine the brown sugar, granulated sugar, and softened butter. Beat until creamy, slightly pale, and well combined.
  • Add the vanilla bean paste and mix until smooth, scraping down the sides and bottom of the bowl.
  • Add the cooled flour and cocoa powder to the bowl. Stir until a soft, fudgy dough forms that pulls away from the sides of the bowl.
  • Fold in the mini chocolate chips with a rubber spatula until evenly distributed.
  • Scoop the dough with a teaspoon or small cookie scoop and roll into 1 inch balls between your palms. Place the balls on a parchment lined baking sheet.
  • Chill the brownie bites in the refrigerator for 20 minutes, until firm.
  • While the bites chill, place the chopped German sweet chocolate in a heatproof bowl. Melt over a double boiler or in the microwave in 20 to 30 second bursts, stirring between each, until smooth and glossy. Stir in the neutral oil if the chocolate seems too thick.
  • Working with a few bites at a time, dip each chilled brownie ball into the melted chocolate using a fork, let the excess drip back into the bowl, then place the coated bite back on the parchment lined baking sheet.
  • Allow the chocolate coating to set at room temperature or refrigerate the tray until the chocolate is firm. Serve slightly chilled.

Notes

- Baking the flour briefly heat treats it so the no-bake brownie bites are safe to eat.
- If the dough feels too dry to come together, add 1 to 2 teaspoons of milk until it forms a soft dough.
- Lightly dust your hands with cocoa powder if the dough sticks while rolling the balls.
- Store the finished brownie bites in an airtight container in the refrigerator for up to 5 days.
- For extra flair, sprinkle the tops with flaky sea salt or additional mini chocolate chips before the chocolate sets.
