Ingredients
  

  • 2 tbsp olive oil
  • 1 medium sweet onion chopped
  • 4 cloves garlic minced
  • 2 medium carrots sliced thin
  • 2 stalks celery chopped
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 cups leafy greens spinach or kale
  • Salt and pepper to taste

Instructions
 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and minced garlic; sautĂ© until translucent, about 5 minutes.
  • 3. Add sliced carrots and chopped celery; cook until softened, about 5 minutes.
  • 4. Pour in vegetable broth, add dried thyme and oregano; bring to a gentle boil.
  • 5. Reduce heat and simmer for 20 minutes.
  • 6. Stir in leafy greens and cook until wilted, about 5 minutes.
  • 7. Season with salt and pepper to taste; serve warm.

Notes

Use baby spinach for a milder flavor or kale for a heartier texture.
Add a squeeze of lemon or a pinch of red pepper flakes for extra brightness.
