- 1 lb elbow macaroni
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2½ cups whole milk
- 1 cup heavy cream
- 1 cup shredded monster cheese
- 1 cup sharp white cheddar
- ½ cup smoked gouda
- ½ cup mozzarella optional
- Salt pepper, paprika
- Optional: green or purple food coloring black olives, candy eyes
1. Boil macaroni in salted water until al dente; drain.
2. In a large saucepan, melt butter over medium heat.
3. Whisk in flour to form a smooth roux.
4. Slowly add milk and cream while whisking; let thicken.
5. Add all cheeses and stir until melted.
6. Add seasonings and optional food coloring.
7. Combine cheese sauce with pasta.
8. Pour into baking dish and decorate with olive “eyes”.
9. Bake at 375°F for 20–25 minutes until bubbly.
10. Serve hot in themed dishes or ramekins.
You can prepare this a day in advance and bake before serving.
Swap in gluten-free pasta and dairy-free cheese for dietary needs.
Use whole wheat pasta for extra fiber.
