Ingredients
  

  • 1 ½ cups rolled oats
  • ¾ cup almond butter
  • ¼ cup chocolate or vanilla protein powder
  • 2 tbsp cocoa powder
  • 2 tbsp honey or maple syrup
  • ½ tsp peppermint extract
  • ¼ tsp sea salt
  • cup dark chocolate chips
  • 1 –2 tbsp milk optional

Instructions
 

  • 1. In a large bowl, mix oats, protein powder, cocoa powder, and sea salt.
  • 2. Add almond butter, sweetener, and peppermint extract. Stir until a dough forms.
  • 3. Fold in chocolate chips.
  • 4. Add 1–2 tbsp milk if mixture is too dry.
  • 5. Roll into balls using about 1 tbsp of dough per ball.
  • 6. Chill for 15–30 minutes and enjoy!

Notes

Store in an airtight container in the fridge for up to 7 days or freeze for 3 months.
Use sunflower seed butter for a nut-free version.
