Ingredients
  

  • 1 1/4 cups flour
  • 1/4 teaspoon salt
  • 1/2 cup cold butter cut into 1/4-inch pieces
  • 5-6 tablespoons ice water
  • 2 1/4 pounds tart apples peeled and diced
  • 1 1/2 tablespoons lemon juice
  • 3/4 cup brown sugar packed
  • 1/4 cup flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch cardamom
  • 1 pinch salt
  • 3/4 cup brown sugar packed
  • 3/4 cup old-fashioned oats
  • 1/2 cup flour
  • 1 pinch salt
  • 6 tablespoons cold butter cut into 1/4-inch pieces

Instructions
 

  • 1. In a medium mixing bowl, combine 1 1/4 cups flour and 1/4 teaspoon salt. Cut in 1/2 cup cold butter until pea-sized pieces form.
  • 2. Add 5-6 tablespoons ice water, one tablespoon at a time, until dough forms. Wrap in plastic and chill for 30 minutes.
  • 3. Preheat oven to 375°F. Roll dough to 1/4-inch thickness and cut with a 3 1/2-inch round cutter. Place in muffin tins and chill.
  • 4. Par-bake crusts for 10 minutes. Set aside.
  • 5. For filling, combine apples, lemon juice, and sugar. Let sit for 30 minutes.
  • 6. Mix flour, spices, and salt. Add to apples and heat for 5-10 minutes until thickened.
  • 7. For topping, combine brown sugar, oats, flour, and salt. Rub in butter until crumbly.
  • 8. Assemble pies by adding 1 tablespoon filling to each crust, then topping with crumble.
  • 9. Bake for 20-25 minutes until golden and bubbling. Cool before serving.

Notes

Use Granny Smith apples for best results.
Ensure butter is cold for a flaky crust.
