Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar plus more for rolling
  • 1 tablespoon packed lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions
 

  • 1. Cream butter and sugar until light and fluffy.
  • 2. Mix in lemon zest, juice, egg, and vanilla.
  • 3. Whisk dry ingredients separately, then slowly mix into wet ingredients.
  • 4. Chill dough for 30–60 minutes.
  • 5. Scoop and roll dough into 1-inch balls, coat in sugar.
  • 6. Place on parchment-lined tray and gently flatten tops.
  • 7. Bake at 350°F for 9–11 minutes until edges are set.
  • 8. Cool 5 minutes on tray, then transfer to wire rack.

Notes

Use fresh lemon zest for best flavor.
Don't overbake—cookies finish cooking on the tray.
Add white chocolate chips or poppyseeds for variation.
