  • 1 scoop vanilla protein powder
  • 2 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 1 tbsp granulated sweetener
  • Zest of 1/2 lemon
  • 1 tbsp lemon juice
  • 3 tbsp unsweetened almond milk
  • 1 tsp melted coconut oil
  • 1/4 tsp vanilla bean paste
  • Pinch of salt
  • Optional toppings: Greek yogurt extra lemon zest, honey

Instructions
 

  • In a microwave-safe mug, whisk together protein powder, flour, baking powder, sweetener, and salt.
  • Add lemon juice, lemon zest, almond milk, coconut oil, and vanilla bean paste. Stir until smooth.
  • Microwave on high for 40 to 60 seconds. Check at 40 seconds, continue in 10-second intervals if needed.
  • Let cool for 1 to 2 minutes.
  • Top with Greek yogurt, lemon zest, or honey. Serve warm.

Notes

- Use almond flour for a gluten-free option.
- Adjust sweetener to taste.
