Instructions
In a microwave-safe mug, whisk together protein powder, flour, baking powder, sweetener, and salt.
Add lemon juice, lemon zest, almond milk, coconut oil, and vanilla bean paste. Stir until smooth.
Microwave on high for 40 to 60 seconds. Check at 40 seconds, continue in 10-second intervals if needed.
Let cool for 1 to 2 minutes.
Top with Greek yogurt, lemon zest, or honey. Serve warm.
