  • 1 cup fresh blueberries plus extra for garnish
  • 1 tablespoon lemon zest
  • 2 tablespoons honey plus extra for drizzling
  • 1/2 cup almond flour
  • 1 teaspoon vanilla bean paste
  • 1/8 teaspoon fine salt

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a medium mixing bowl, stir together the cottage cheese, lemon zest, honey, vanilla bean paste, and salt until mostly smooth and creamy.
  • Add the almond flour and fold it in until the mixture is thick, soft, and scoopable.
  • Gently fold in the blueberries, keeping them as whole as possible.
  • Scoop about 1 tablespoon of the mixture per bite and roll each portion between your palms into a ball.
  • Arrange the balls on the prepared baking sheet, spacing them slightly apart.
  • Bake for 10 to 12 minutes, until the bites look lightly golden on the edges.
  • Let the bites cool on the baking sheet for 5 minutes, then drizzle with extra honey and garnish with additional fresh blueberries before serving.

Notes

- Chill the mixture for 10 minutes if it feels too sticky to roll.
- Store cooled bites in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
