  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter room temperature
  • 1/3 cup packed brown sugar
  • 2/3 cup heavy whipping cream
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla bean paste
  • 1/2 teaspoon almond extract

Instructions
 

  • Preheat the oven to 425°F and line a large cookie sheet with parchment paper.
  • In a large bowl sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Add the softened butter and brown sugar to the dry ingredients and beat with an electric mixer on low to medium speed until the mixture looks sandy and crumbly.
  • Add the heavy cream, honey, vanilla bean paste, and almond extract to the bowl and mix with a fork or spatula just until a thick dough forms and no dry patches remain.
  • Lightly flour a work surface, then turn the dough out and gently pat or roll it to a 1/2 inch thickness.
  • Cut the dough into 3 inch squares and place them on the prepared cookie sheet, leaving a little space between each piece.
  • Use a sharp knife to score a shallow X across the top of each square without cutting all the way through.
  • Bake for 12 minutes, or until the squares are set and the edges are lightly golden.
  • Remove the pan from the oven and let the lembas bread cool completely on the pan before serving or packing.

Notes

- For the best texture, do not overmix the dough once you add the cream and honey. Mix only until it comes together.
- Store cooled lembas bread in an airtight container at room temperature for up to 3 days, or wrap pieces individually for travel.
