Wet Ingredients

  • 1 large egg
  • 2 tablespoons key lime juice Fresh juice for best flavor.
  • 1 teaspoon key lime zest Don't skip for maximum flavor.
  • 1 teaspoon vanilla extract

Icing

  • powdered sugar for icing Adjust with key lime juice to desired consistency.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking sheet.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Mix in the egg, key lime juice, key lime zest, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet, mixing just until no flour streaks remain.
  • Drop rounded tablespoons of dough onto the greased baking sheet.

Baking

  • Bake for 10–12 minutes until edges are slightly golden and centers are soft.
  • Let cookies cool on a wire rack.

Glazing

  • Mix powdered sugar with additional key lime juice until drizzleable.
  • Drizzle over cooled cookies and let the glaze set.

Notes

For best results, use softened butter, zest before juicing, and ensure cookies are cool before glazing.
