- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter melted
- 1/4 cup sugar
- 8 oz cream cheese softened
- 1/2 cup powdered sugar
- 1/2 cup heavy whipping cream
- 1 tsp vanilla bean paste
- 1/2 cup caramel sauce
- 1/2 cup chopped pecans
1. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until crumbly. Press the mixture into the bottoms of muffin tins lined with cupcake liners.
2. In a mixing bowl, beat the cream cheese and powdered sugar until smooth. In another bowl, whip the heavy cream and vanilla bean paste until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
3. Fill each crust with the cream cheese filling, smoothing the top. Drizzle caramel sauce over each cheesecake and sprinkle with chopped pecans.
4. Refrigerate the cheesecakes for at least 4 hours or until set. Enjoy!
