  • 0.5 lb butter softened
  • 1 cup sugar
  • 2 tablespoons browning sauce optional
  • 1 teaspoon vanilla
  • 1.5 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon allspice
  • 0.5 teaspoon salt
  • 4 large eggs
  • 1 cup dark molasses + apple juice
  • 0.25 lb mixed peel
  • 0.25 lb cherries
  • 0.25 lb mixed nuts unsalted
  • 0.5 lb prunes chopped
  • 1 lb raisins
  • Zest of 1 lime
  • Zest of 1 lemon

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a baking pan with butter.
  • Cream the butter and sugar until light and fluffy, about 3-5 minutes.
  • Add browning sauce, vanilla, and eggs; mix until well combined.
  • Whisk flour, baking powder, cinnamon, allspice, and salt in a separate bowl.
  • Gradually add dry ingredients to the wet mixture, stirring gently.
  • Fold in molasses + apple juice, mixed peel, cherries, nuts, prunes, raisins, lime zest, and lemon zest.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 60-70 minutes, or until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

- Browning sauce adds depth and color but is optional.
- Use fresh lime and lemon zest for best flavor.
