Ingredients
  

  • 8 tablespoons unsalted butter softened
  • 1 8-ounce loaf Italian bread
  • 2 medium scallions thinly sliced
  • 5 cloves garlic minced
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon kosher salt
  • 3 ounces low-moisture shredded mozzarella cheese
  • 3 ounces Parmesan cheese

Instructions
 

  • 1. Preheat the oven to 425ºF and line a baking sheet with parchment paper or foil.
  • 2. Cut the Italian bread in half horizontally, then cut each half crosswise to make 4 pieces.
  • 3. In a bowl, mix softened butter, scallions (reserve 1 tablespoon for garnish), garlic, mayonnaise, garlic powder, black pepper, sugar, and salt into a paste.
  • 4. Spread the garlic butter evenly on the cut sides of the bread.
  • 5. Combine mozzarella and Parmesan in a bowl, then sprinkle evenly over the bread.
  • 6. Bake for 15 minutes until the cheese is melted and browned in spots.
  • 7. Garnish with reserved scallions and serve warm.

Notes

Use high-quality butter for the best flavor.
For extra spice, add a pinch of red pepper flakes to the butter mixture.
