Ingredients
  

  • 2 tablespoons melted butter
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Kernels from 1 cob of sweet corn
  • 1 tablespoon chives

Instructions
 

  • 1. In a large bowl, whisk together melted butter, milk, and eggs.
  • 2. Add flour, baking powder, and salt; mix until combined.
  • 3. Fold in cheddar, Parmesan, corn, and chives.
  • 4. Heat a skillet over medium-high heat with oil or butter.
  • 5. Scoop 1/2 cup batter into pan for each fritter.
  • 6. Cook for 2-3 minutes until golden brown on the bottom, then flip.
  • 7. Cook for another 2-3 minutes until golden brown.
  • 8. Remove from pan and repeat with remaining batter. Serve hot.

Notes

OPTIONAL: Add 1/2 cup cooked meat like turkey bacon or turkey bacon to the batter.
3/4 cup canned or frozen corn can be substituted; drain well.
