- 2 tablespoons melted butter
- 2 eggs
- 1/4 cup milk
- 1/2 cup flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- Kernels from 1 cob of sweet corn
- 1 tablespoon chives
1. In a large bowl, whisk together melted butter, milk, and eggs.
2. Add flour, baking powder, and salt; mix until combined.
3. Fold in cheddar, Parmesan, corn, and chives.
4. Heat a skillet over medium-high heat with oil or butter.
5. Scoop 1/2 cup batter into pan for each fritter.
6. Cook for 2-3 minutes until golden brown on the bottom, then flip.
7. Cook for another 2-3 minutes until golden brown.
8. Remove from pan and repeat with remaining batter. Serve hot.
OPTIONAL: Add 1/2 cup cooked meat like turkey bacon or turkey bacon to the batter.
3/4 cup canned or frozen corn can be substituted; drain well.
