Ingredients
  

  • 1 cup granulated sugar
  • 1/3 cup light corn syrup
  • 1/4 cup fresh lemon juice strained
  • 1/2 tsp lemon zest optional
  • Powdered sugar for dusting optional

Instructions
 

  • 1. Combine sugar, lemon juice, and corn syrup in a saucepan over medium heat.
  • 2. Stir until sugar dissolves completely.
  • 3. Insert candy thermometer and cook without stirring until it reaches 300°F.
  • 4. Remove from heat and stir in lemon zest.
  • 5. Drop hot syrup onto parchment or into molds.
  • 6. Let cool and harden for 20 minutes.
  • 7. Dust with powdered sugar and store airtight.

Notes

Use a candy thermometer for best results.
Infuse lemon juice with herbs or spices for variations.
Store in a cool, dry place for up to 4 weeks.
