- 1 cup granulated sugar
- 1/3 cup light corn syrup
- 1/4 cup fresh lemon juice strained
- 1/2 tsp lemon zest optional
- Powdered sugar for dusting optional
1. Combine sugar, lemon juice, and corn syrup in a saucepan over medium heat.
2. Stir until sugar dissolves completely.
3. Insert candy thermometer and cook without stirring until it reaches 300°F.
4. Remove from heat and stir in lemon zest.
5. Drop hot syrup onto parchment or into molds.
6. Let cool and harden for 20 minutes.
7. Dust with powdered sugar and store airtight.
Use a candy thermometer for best results.
