Ingredients
  

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 2-3 garlic cloves crushed
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large chicken breasts skinless, boneless
  • Wooden skewers soaked in boiling water for 30 minutes

Instructions
 

  • 1. Combine olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, oregano, salt, and pepper in a bowl.
  • 2. Slice chicken into bite-sized chunks and place in a bowl. Pour marinade over chicken, cover, and refrigerate for at least 30 minutes or up to 24 hours.
  • 3. Thread marinated chicken onto soaked wooden skewers.
  • 4. Heat an outdoor grill or stovetop grill pan. Cook skewers, turning every 3-5 minutes, until chicken is cooked through and golden brown on all sides.
  • 5. Remove from heat and let rest for 5 minutes before serving.

Notes

Ensure skewers are soaked to prevent burning.
Marinate chicken for maximum flavor.
