  • 1 cup warm milk
  • 2 teaspoons instant dry yeast
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 large egg
  • 1/2 cup unsalted butter softened
  • 2 cups fresh or frozen strawberries
  • 1/4 cup additional granulated sugar
  • 1 tablespoon lemon juice
  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla bean paste
  • 1/2 cup strawberry puree chilled

Instructions
 

  • In a medium saucepan, combine strawberries, additional sugar, and lemon juice. Cook until thick, about 10-15 minutes. Blend and let cool.
  • In a stand mixer, mix flour, yeast, granulated sugar, and salt. Add warm milk, butter, and egg. Knead for 5-7 minutes until smooth. Let rise covered for about 2 hours.
  • On a floured surface, roll the dough into a rectangle. Spread the cooled strawberry filling, roll tightly, and cut into 12 pieces. Place cut side up in a greased baking dish.
  • Cover and let rolls rise for 30-60 minutes. Preheat oven to 350°F.
  • Bake for 20-25 minutes until golden brown. Let cool slightly before icing.
  • Beat cream cheese, powdered sugar, vanilla, and strawberry puree until smooth. Spread over warm rolls.
  • Serve rolls warm.

- Ensure milk is warm, not hot, to activate yeast.
- Fine salt distributes more evenly.
- Full-fat cream cheese provides the best texture.
