  • 2 cups plain Greek yogurt 2 percent or full fat
  • 1 cup mixed berries strawberries, blueberries, raspberries, fresh or thawed from frozen
  • 1 cup granola
  • 2 tablespoons honey optional
  • 4 fresh mint leaves for garnish (optional)

Instructions
 

  • Rinse fresh berries under cool water, then pat them completely dry with a clean towel. If using frozen berries, let them sit at room temperature for a few minutes until slightly softened.
  • Stir the Greek yogurt in a bowl until smooth and creamy.
  • Set out 2 clear glasses or jars. Spoon 1/4 of the yogurt into the bottom of each glass to form the first layer.
  • Add a layer of mixed berries over the yogurt in each glass, using about 1/4 of the berries per glass.
  • Sprinkle a layer of granola over the berries in each glass, using about 1/4 of the granola per glass.
  • Repeat the layers with the remaining yogurt, berries, and granola, finishing with granola on top so it stays crunchy.
  • Drizzle 1 tablespoon of honey over the top of each parfait, if using.
  • Garnish each parfait with fresh mint leaves and serve immediately.

Notes

- For a lower sugar parfait, use plain Greek yogurt and omit the honey or replace it with a sugar free sweetener.
- To keep the granola crunchy for make ahead, layer only yogurt and berries, then add granola and honey just before serving.
- You can use grain free or low sugar granola to make this parfait more keto friendly.
- Build the parfaits in jars with lids for an easy grab and go breakfast.
