Ingredients
  

  • 1 ½ cups soft Medjool dates pitted
  • ½ cup peanut butter or almond butter
  • ½ cup rolled oats
  • Pinch of sea salt
  • ¼ cup dark chocolate chips
  • 1 tsp coconut oil optional
  • Toppings: chopped nuts flaky salt

Instructions
 

  • 1. If dates are firm, soak in warm water for 10 minutes. Drain well.
  • 2. Blend dates, peanut butter, oats, and salt in a food processor until dough forms.
  • 3. Press into a parchment-lined pan evenly.
  • 4. Melt chocolate and coconut oil; drizzle or spread on top.
  • 5. Sprinkle with optional toppings.
  • 6. Freeze for 30 minutes, then slice into bars.

Notes

Store in fridge for up to 2 weeks or freeze for up to 2 months.
Use sunflower seed butter for a nut-free version.
Add protein powder or seeds for extra nutrition.
