- 1 ½ cups soft Medjool dates pitted
- ½ cup peanut butter or almond butter
- ½ cup rolled oats
- Pinch of sea salt
- ¼ cup dark chocolate chips
- 1 tsp coconut oil optional
- Toppings: chopped nuts flaky salt
1. If dates are firm, soak in warm water for 10 minutes. Drain well.
2. Blend dates, peanut butter, oats, and salt in a food processor until dough forms.
3. Press into a parchment-lined pan evenly.
4. Melt chocolate and coconut oil; drizzle or spread on top.
5. Sprinkle with optional toppings.
6. Freeze for 30 minutes, then slice into bars.
Store in fridge for up to 2 weeks or freeze for up to 2 months.
