  • 2 large eggs at room temperature
  • 3/4 cup milk at room temperature
  • 1/3 cup vegetable oil
  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons lime flavored agar agar powder
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/3 cups sweetened condensed milk
  • 1/3 cup freshly squeezed lime juice
  • 1 tablespoon lime flavored agar agar powder
  • 2 tablespoons hot water

Instructions
 

  • Line an 8 inch square baking pan with parchment paper, making sure it comes slightly up the sides. Lightly grease the parchment if desired and set the pan aside.
  • Preheat the oven to 350°F.
  • In a large mixing bowl, whisk the eggs for about 1 minute until slightly foamy.
  • Add the milk, vegetable oil, 1/4 cup lime juice, lime zest, and 2 tablespoons lime flavored agar agar powder to the eggs and whisk until the mixture is smooth and well combined.
  • Sift the flour, granulated sugar, baking powder, and salt over the wet ingredients. Gently whisk just until the batter is smooth and no dry streaks remain. Do not overmix.
  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake for 30 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  • Place the pan on a wire rack and let the cake cool completely in the pan.
  • In a medium bowl, combine the sweetened condensed milk and 1/3 cup lime juice. Whisk until thickened and creamy, then set aside.
  • In a small bowl or cup, combine 1 tablespoon lime flavored agar agar powder and the hot water. Stir until the agar agar is completely dissolved.
  • Pour the dissolved agar agar mixture into the condensed milk mixture and whisk until smooth and fully combined.
  • Spread the lime condensed milk topping evenly over the cooled cake, all the way to the edges.
  • Refrigerate the cake for at least 2 hours, or until the topping is fully set and the cake is chilled.
  • Slice into 9 squares and serve chilled.

Notes

- Use room temperature eggs and milk so the batter mixes smoothly and bakes evenly.
- Do not overmix once you add the flour; this keeps the cake soft and tender.
- Make sure the agar agar is fully dissolved in hot water before adding it to the topping so it sets evenly without grainy bits.
- For clean slices, chill the cake until firm and wipe the knife between cuts.
