Ingredients
  

  • 1 pound ground beef
  • 1 shallot diced
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 2 teaspoons honey
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chopped parsley
  • 4 large carrots peeled
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 mini cucumbers sliced
  • 1 cup grape tomatoes halved
  • 1/4 cup red onion sliced
  • 2 tablespoons olive oil
  • 2 tablespoons grape juice + a splash of vinegar vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup feta
  • 2 tablespoons fresh chopped parsley
  • 2 cups cooked white rice
  • 2 cups lettuce shredded
  • 1 batch tzatziki

Instructions
 

  • 1. Preheat the oven to 400 degrees Fahrenheit.
  • 2. In a mixing bowl, combine ground beef, shallot, garlic, olive oil, honey, salt, cumin, oregano, red pepper flakes, black pepper, and parsley. Mix well.
  • 3. Form into 16 meatballs and place on a parchment-lined baking sheet.
  • 4. Cut carrots into matchstick shapes, toss with olive oil, salt, and pepper. Place on the baking sheet with meatballs.
  • 5. Roast for 20-25 minutes until meatballs reach an internal temperature of 165°F and carrots are fork-tender.
  • 6. In a bowl, combine cucumbers, tomatoes, red onion, olive oil, grape juice + a splash of vinegar vinegar, salt, pepper, feta, and parsley for the salad.
  • 7. Assemble bowls with rice, lettuce, cucumber salad, meatballs, carrots, and tzatziki.

Notes

Use any ground meat like turkey bacon, turkey, or chicken.
Make dairy-free by omitting feta and using plant-based Greek yogurt.
