Preparation

  • Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until evenly mixed.
  • Gradually add the flour mixture to the wet ingredients, alternating with the grape soda. Start and end with the dry ingredients, mixing just until combined.
  • Pour the batter into the prepared cupcake liners, filling each about 2/3 full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Finishing Touch

  • Once cooled, top with grape-flavored frosting if desired.

Notes

For the best results, use chilled grape soda. Store leftover cupcakes in an airtight container at room temperature for up to three days.
