Ingredients
  

For the Brownies

  • ½ cup unsalted butter Melted and cooled slightly
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup Dutch-process cocoa powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs (room temperature) For better emulsification
  • ½ cup all-purpose flour
  • 1 tbsp cornstarch

For the Ganache

  • ¼ cup heavy cream Heated
  • 4 oz semisweet chocolate (chopped) For making the ganache
  • Pinch of salt
  • 2-3 tbsp rainbow candy-coated chocolate chips Wilton rainbow chips or similar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper.
  • In a medium bowl, melt the butter and let it cool slightly. Whisk in the granulated sugar and brown sugar until well combined.
  • Add the cocoa powder, salt, and vanilla extract, stirring until smooth. Then, whisk in the eggs one at a time.
  • Gently fold in the all-purpose flour and cornstarch until just combined. The batter should be thick and glossy.
  • Pour the batter into the prepared pan and spread evenly.

Baking

  • Bake the brownies for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

Making Ganache

  • While the brownies bake, heat the heavy cream in a saucepan over medium heat until it begins to simmer.
  • Remove from heat and add the chopped semisweet chocolate, stirring until completely smooth and glossy.

Finishing

  • Once the brownies are out of the oven, pour the ganache evenly over the top while it is still warm.
  • Sprinkle the rainbow candy-coated chocolate chips on top and let the brownies cool to room temperature.
  • Refrigerate for about 1 hour until the ganache is set.

Notes

Use high-quality chocolate for the ganache for a more luxurious taste. Do not overbake the brownies. Chill longer if too soft.
