Ingredients
  

  • 10 garlic scapes trimmed
  • 1/3 cup pine nuts or walnuts
  • 1/3 cup grated Parmesan cheese
  • Juice of 1/2 lemon
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • 1. Trim the garlic scapes by removing the bulb and woody ends.
  • 2. Place scapes, nuts, cheese, lemon juice, salt, and pepper into a food processor.
  • 3. Pulse to chop the ingredients slightly.
  • 4. With the motor running, slowly drizzle in olive oil.
  • 5. Blend until smooth but slightly textured.
  • 6. Taste and adjust seasoning. Store in a jar or freeze in cubes.

Notes

For a milder flavor, use younger scapes or add a bit of spinach.
Substitute pine nuts with walnuts or almonds.
Freeze in ice cube trays for easy portioning.
