  • 2 large eggs Bind the ingredients together.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional, for topping) Can be substituted with dairy-free version for nut-free option.

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  • In a food processor, combine the pitted dates and hot water. Blend until you achieve a smooth, thick paste, scraping down the sides as needed.
  • Pour the melted coconut oil, eggs, and vanilla extract into the date paste. Process until just combined.
  • In a separate bowl, whisk together the cocoa powder, baking powder, and salt until well mixed.
  • Gradually add the dry ingredients into the wet mixture in the food processor, pulsing until just incorporated. Be careful not to overmix, as you want the batter to remain thick.
  • Pour the brownie batter into the prepared baking pan, spreading it evenly. If using chocolate chips, sprinkle them over the top.
  • Bake for 20 to 25 minutes. A toothpick inserted near the edge should come out mostly clean, but the center should stay fudgy.
  • Allow the brownies to cool completely in the pan before cutting them into squares.

Notes

For best results, choose fresh Medjool dates and avoid overbaking to maintain a fudgy center. Experiment with add-ins like nuts or a swirl of nut butter.
