Preparation

  • In a heat-safe bowl, melt the chopped chocolate and butter together. Stir until smooth and silky, then allow to cool slightly.
  • In a large mixing bowl, whisk together the eggs, granulated sugar, and brown sugar until light and frothy for about 3-5 minutes.
  • Add the slightly cooled chocolate-butter mixture to the egg-sugar mixture along with the vanilla extract, mixing gently until just combined.
  • In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gently fold into the wet mixture, being careful not to overmix.
  • If you prefer thicker cookies, consider chilling the dough in the refrigerator for 20-30 minutes.

Baking

  • Preheat your oven to 350°F (175°C).
  • Using a cookie scoop, portion the dough onto parchment-lined baking sheets, ensuring space between each scoop. Sprinkle extra chocolate chips or chunks on top if desired.
  • Bake for 10-12 minutes, or until the edges are set while the centers are slightly soft. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use high-quality chocolate and avoid overmixing. Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
