  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Oreo cookie crumbs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 package instant chocolate pudding mix
  • 1 cup milk
  • Chocolate curls optional

Instructions
 

  • Melt butter and beat with brown and granulated sugars until creamy, about 2-3 minutes.
  • Add eggs one at a time and mix with vanilla bean paste until smooth, about 1-2 minutes.
  • Sift flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix into wet mixture and fold in Oreo crumbs.
  • Let dough rest for 10 minutes while preheating oven to 350°F (175°C).
  • Scoop tablespoon-sized dough onto lined baking sheets and bake for 11 minutes. Press centers with a cup, then bake for an additional 2 minutes.
  • Let cookies cool on sheets for 5 minutes before transferring to wire racks.
  • Whip heavy cream with powdered sugar until stiff peaks form; fold in prepared chocolate pudding.
  • Fill each cookie with mousse, top with whipped cream and optional chocolate curls.
  • Refrigerate filled cookies until mousse is set, around 30 minutes.
